jamaican planters pudding
For the sponge
110g butter at room temperature
110g granulated sugar
3 eggs
3 tablespoons rum
110g self raising flour sifed with a pinch of salt
50g maraschino cherries
For the filling
3 ripe bananas (but not soft)
1/2 a fresh pineapple
3 tablespoons tia maria
4 tablespoons jamaican rum
For the topping
275ml whipped cream
1 dozen maraschino cherries
It is based on a very old jamaican recipe that appeared on the menu at Government House whenever royalty visited the island.
You will also need a 1.25litre ring mould (21 cm diameter) well buttered and dusted with flour and a 2litre pudding bowl well buttered.
Pre heat the oven to gas mark 4 350
