hot and sour preserve

4 teaspoons zedoary peeled and chopped finely

2 tenspoons ginger chopped finely

1 tenspoon garlic chopped finely

1 teaspoon green chilli minced

6 tablespoons lemon juice

salt

Mlix all the ingredients.

Put in an airtight jar and shake well to blend.

Serve in tiny quantities with rice and curry.

Zedoary soup

6 tablespoons french beans chopped finely

6 tablespoons carrots chopped finely

6 tablespoons peas

6 tablespoons sweetcorn

4 tablespoons sunflower oil

2 onions chopped finely

6 tablespoons tomatoes blanched skinned and chopped

1 teaspoon sugar

4 talblespoons distilled vinegar

4 tablespoons coriander leaves

1 teaspoon zedoary chopped finely

salt

Simmer the vegetables in 600ml water until cooked but firm.

Reserve along with the cooking fluid.

Heat the oil in a separate pan and add the onion.

Fry until golden.

Add the tomatoes salt and sugar.

Stir until the tomatoes become mushy.

Add the vegetables with the broth vinegar chopped coriander leaves and zedoary

Bring to the boil and take off the heat.

Serve very hot.

Serves 4
