grilled prawns with lemon grass and basil butter
12 tiger or large prawns in their shells
olive oil
2 stalks of lemon grass
a large handful of basil leaves about 30
100g butter
juice of a lemon
Thread the prawns on to skewers which will make them easier to turn.
Brush them with olive oil.
Slice the lemon grass into thin shreds and tear the basil leaves into small pieces.
Mix the two together and add them to the butter.
Season with a little salt then leave to soften and melt in a small saucepan over a low heat.
Grill the prawns for 23 minutes on each side.
To serve add the lemon juice to the butter.
Dip the prawns in the melted butter scooping up a few basil leaves as you do so peeling and dipping as you go.
