german apple cake
450g cooking apples peeled cored and sliced
110g butter or margarine
110g granulated sugar
225g self raising flour sifted
A pinch of salt
1 egg beaten
110g sultanas
1/2 level teaspoon ground cinammon
50g demerara sugar
icing sugar
Preheat oven to gas mark 5375F 190 C.
You will need a 18cm cake tin well greased.
First of all melt the butter or margarine in a large saucepan remove the pan from the heat and stir in the sugar sifted self raising flour salt and egg and using a wooden spoon mix everything to a stiff smooth dough.
Now place two thirds of the dough into the greased cake tin and press it out as evenly as possible using your hands.
Now mix together the apples sultanas and cinnamon and place these in the cake tin all over the dough then sprinkle over the demerara sugar and level the surface as much as possible using the back of a tablespoon.
Now carefully spread the remaining dough over the apples.
Bake in the oven for 50 55 minutes or until the top is golden brown.
Leave it to cool in the tin for 10 minutes before turning out and serving sprinkled with icing sugar
This is probably nicest served hot as a dessert but it does taste very good cold. Either way we like it with chilled whipped cream or soured cream flavoured with a little cinnamon.
