seville orange marmalade

1.34kg Seville oranges

3 1itres water

2.68kg pres rving sugar

1 tspcitric acid or juice of

2 lemons

Method

I Cut the oranges in half. Squeeze out the juice and place in a large pan. Tie pips in muslin and add to juice

2 Slice peel to required thickness add to pan

3 Add water and either lemon juice or citric acid and bring to the boil

4 Reduce heat and simmer for 11/22 hours until peel is very soft

5 Remove pips. Add sugar and gently heat until dissolved

6 Bring to the boil and then allow mixture to boil rapidly until the setting point (see page 59 ) is reached. Avoid any spillage

7 Allow to cool

8 Pour into prepared jars cover seal and label

Makes: 4.5kg approx
