dark truffles

2 bars bittersweet chocolate

1 bar bakers coating chocolate

1/4 cup cocoa

2 cups cream

2 sticks butter

1 tsp vanilla

2 oz orange liqueur

2 oz amaretto

Scald cream 180 to 190F.

Remove from heat.

Stir in chopped bittersweet chocolate and whisk smooth.

Add orange liquer and amaretto.

Cool to below 90Fand add butter.

Cool to room temperature (until firm enough to scoop).

Scoop using a 1.5 oz scoop then refrigerate.

Coat hands with cocoa and roll into balls.

Dip in bakers coating chocolate.English toffee

1.5 lbs butter

3 cups sugar

3 giant Hershey chocolate bars

1 lb walnuts

Grind walnuts medium fine.

Grate 1/2 of Hershey chocolate (set the rest aside).

Put hot water in sink (for soaking thermometer).

Cook butter and sugar in heavy pan stirring constantly.

Bring to 310 degrees (roughly 15 minutes).

Immediately put thermometer into sink.

Pour toffee onto two large size cookie sheets (the first with sides).

Immediately sprinkle with grated chocolate and spread evenly.

Immediately sprinkle with 1/2 of the walnuts.

Gently pat walnuts onto toffee.

Put into refrigerator to cool.

Melt rest of Hershey bars (use double boiler or electric frying pan on low heat)

Flip cooled toffee onto wax paper (chocolate side down).

Spread with melted chocolate.

Sprinkle with rest of walnuts.

Gently pat walnuts onto toffee.

Put back into refrigerator to cool.

When the toffee is cooled then break it up into pieces.

two large cookie sheets (at least one with sides)
