cucumber and peanut salad

300g cucumber chopped very finely
1/2 teaspoon green chilli minced
4 tablespoons peanuts coarsely crushed
2 tablespoons coriander leaves chopped
4 tablespoons coconut grated if fresh or desiccated
2 teaspoons sunflower oil
1 teaspoon black mustard seeds
8 curry leaves
1/2 teaspoon sugar
salt
Mix the cucumber chilli peanuts coriander and coconut.
Heat the oil in a small pan and add the mustard seeds.
When they pop add the curry leaves and pour over the cucumber mixture.
Add the salt and sugar just before serving.
A salad from Maharashtra and its name means if fragrant cucumber. It combines the juiciness of cucumber with the crunch of peanuts.
