crispy potato dice

2 medium potatoes cooked and peeled
100ml clarified butter
1 tspn fresh rosemary finely chopped
1 tspn fresh thyme finely chopped
Salt and pepper
Cut the potatoes into 5mm cubes.
Heat the butter in a frying pan and fry the potatoes.
Drain on kitchen paper.
Add the herbs salt and pepper.
Phce in a non stick 6cm galette mould.
Colour on griddle until golden then unmould.
Serves 4
