creamed carrots

600g carrots
water
salt
Sauce
11/2 tablespoons margarine or butter
3 tablespoons flour
400ml milk mixed with liquid from cooking the carrots
4 tablespoons finely chopped paraley
Peel and cut the carrots in cubes or slices.
Cook in lightly salted water till tender.
Drain well.
In a saucepan melt the margarine or butter.
Stir in the flour.
Add the milk and bring to a boil beating the sauce until smooth.
Let cook for a few minutes.
Season to taste with salt and pepper.
Fold in the cooked carrots and parsley.
Instead of carrots any kind of vegetables e.g. peas beans or white cabbage may be used.
