crab louis

1 large round iceberg lettuce shredded

1 small savoy cabbage finely shredded

1pound crab meat

4 tomatoes cut into wedges

7 eggs hardboiled peeled and cut into wedges

3 green onions shredded to garnish

Piquant herb dressing:

1 cup mayonnaise

5 tablespoons tomatobased chili sauce

1/2 cup finely chopped green bell pepper

3 tablespoons green onions sliced

1 tablespoon chopped parsley

2 teaspoons tomato paste

1 teaspoon worcestershire sauce

1/2 cup heavy cream whipped

salt and freshly ground black pepper

In a bowl stir together the mayonnaise chili sauce bell pepper green onions parsley tomato paste worcestershire sauce and salt and pepper to taste.

When well mixed fold in the whipped heavy cream.

Cover and refrigerate at least 1 hour.

When ready to serve line a serving platter with the shredded lettuce and cabbage and pile the crab meat on top.

Arrange the tomato and egg wedges around the crab meat.

Spoon the dressing over the crab meat and garnish with the shredded green onion.

Many versions of the Louis dressing can be found although they are all based on a rich piquant mayonnaise mixture. Other types of seafood go well with the dressing such as lobster and shrimp and it is also excellent with a mixed seafood salad.
