cornish pasties

455g lean topside or rump steak

1 medium onion diced

230g potato diced

Salt and pepper

1 tablespoon stock or water

1 tablespoon chopped mixed herbs

Double quantity basic shortcrust pastry recipe

A little beaten egg to glaze

Cut the meat into bitesized pieces and mix with the onion potato salt pepper stock or water and herbs.

Roll out the pastry and cut out four 20.5 cm (8 in) circles.

Divide the meat mixture into four and place in the centre of each pastry circle.

Brush the rim with water.

Bring up the pastry edges to meet above the filling and pinch firmly together.

Flute the edges.

Place the pasties on a baking tray and chill while heating the oven to Gas Mark 6400 degrees F 200 degrees C.

Glaze with beaten egg and bake for 20 minutes.

Reduce the heat to Gas Mark 4 350 degrees F 180 degrees C and bake for a further 30 minutes.

Serve the pasties hot or cold.
