450g raw peanuts

3 tablespoons light soy sauce

3 tablespoons dark soy sauce

1 tablespoon garlic finely chopped

150ml cider vinegar or Chinese white rice vinegar

75ml dry sherry or rice wine

First blanch the peanuts by immersing them in a pot of boiling water for about 2 minutes.

Drain them and let them cool and the skins should come off easily.

Put the blanched peanuts in a bowl.

Mix in all the other ingredients.

Let the peanuts marinade in this mixture for at least 2 or 3 hours stirring from time to time to ensure an even distribution of the marinade.

Most of it will be absorbed by the peanuts.

Serve with Pickled Vegetables as snacks or appetisers.

Peanuts were only introduced into China in the sixteenth century but they quickly won an important place in Chinese agriculture. The peanut plant replenishes the soil as it grows and the nuts themselves are a nutritious supplement to the diet both in their natural form and as groundnut oil. This dish may be made a day or two in advance and can be served cold or at room temperature.
