citrus chile dressing
1 jalapefro chile seeded
2 tablespoons fresh coriander leaves
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon fresh lime juice
1/2 teaspoon ground cumin
2 tablespoon olive oil
salt to taste
In a blender or food processor puree all ingredients until smooth.
Taste and adjust seasoning. Refrigerate in an airtight container for up to 5 days.
This cumin scented mixture brightens up just about anything from a humble black bean and corn salad to an imposing grilled fish served with the freshest seasonal greens.
