150ml milk
2 tbspns double cream
30g sugar
200g bitter chocolate (minimum 70% cocoa solids)
30g butter diced
Place the milk cream and sugar in a heatproof bowl set over a saucepan of simmering water and cook until all the sugar has dissolved.
Chop the chocolate into small pieces and place with the butter in a heatproof bowl set over a saucepan of simmering water.
Heat gently until melted.
Slowly pour the milk and cream mixture over the chocolate and whisk to a smooth sauce.
