chocolate mousse

120g dark chocolate

4 eggs

Break the chocolate into squares.

Place in a small bowl that fits comfortably into the top of a saucepan hair filled with simmering water.

The bottom of the bowl should not touch the water.

Add 3 tablespoons of water or strong coffee (preferably of the instant variety).

Turn the heat very low or even off and leave the chocolate pieces to melt.

Avoid the temptation to stir them although you can dunk the unmelted bits into the liquid chocolate to help them on their way.

In a clean bowl beat the egg whites until stiff and frothy.

Remove the melted chocolate from the heat and smoothly and thoroughly stir in the egg yolks. Fold in the beaten egg whites quickly but gently.

It is better to have the odd tiny piece of egg white in the mousse than to overmix.

Pour into glasses or even more charmingly into a plain white bowl.

I have served this mousse in small white ramekins with a thin layer of Grand Marnier floating on top and very good it was too.
