4 eggs

300g sugar

120g bitter chocolate (minimum 70% cocoa solids) melted

240g butter melted

120g plain flour

90g cocoa powder

540g bitter chocolate (minimum 70% cocoa solids)

250g hazelnuts roasted and shelled

pistachios chopped

Whisk the eggs and sugar to a stiff sabayon.

Mix the melted chocolate and butter together.

Sift the flour and cocoa powder together.

Place 240g of the chocolate in the food processor for a few seconds to break into medium sized crumbs.

Repeat with the hazelnuts.

Fold the flour and cocoa into the sabayon.

When half mixed add the melted chocolate mixture chopped chocolate and the hazelnuts.

Continue folding until all the ingredients are evenly mixed.

Pour into a lined tray 30 x 30 x S cm and spread out evenly

Cook in the oven preheated to 170
