chicken or beef kebab
450g chicken breast skinned and off the bone or 450g fillet beef steak
1/2 tspn salt
1 tbspn fresh coriander leaves
spices:
1 tspn garam masala
1 tspn ground cumin
1 tspn paprika
2 tspn garlic powder (optional)
1/2 tspn ginger powder
1/2 tspn cinnamon powde
1/2 tspn star aniseed powder
3 tspn chilli powder (optional).
Coarsely chop the chicken or meat removing unwanted gristle etc. as you do so.
Then simply put everything into a food processor. (In India it would be hand ground).
Alternatively use a mincer but the texture will be different.
Pulse the processor then run it for a short while trying to obtain a well ground effect.
Remove and ensure everything is well mixed. Then divide into four shape into sausage shapes.
When youre ready preheat oven to 190C/375F/Gas 5.
Place the kebabs on an oven tray and bake for 15 minutes.
Best served fresh but they do reheat and freeze. Alternatively cook on a barbeque on skewers (they would use a tandoori oven in India).
One of the subcontinents classics. Kebabs are the perfect starter. This method ensures absolutely fresh tasting kebabs which hold their sausage shape and theyre easy to make too. Serve with salad lemon wedges mint chutney and naan bread.
