Butternut Squash Soup
1 meduim onion, chopped
2 tbsp butter
2 c chicken broth
1 lb butternut squash, pared, seeded, and cut into 1 inch cubes
2 pears, pared/sliced
1 tsp fresh thyme leaves, snipped
1/4 tsp salt
1/4 white pepper
1/4 tsp ground coriander
1 c whipping cream
1 unpared pear, sliced
1/2 c toasted pecans
Cook and stir onion in butter in dutch oven until tender. Add broth,
squash, and 2 sliced pears, thyme, salt, pepper, and coriander. Heat until
boiling then immediately reduce heat to medium. Simmer until squash is tender.
Pour 1/2 soup into food processor, cover and process until smooth and
creamy. Repaet with the 2nd half. Add both parts back to the oven, stirring
in the whipping cream. Heat until hot–becareful not to burn. Serve w/ the
pecans and sliced pears.

Salad
Fresh Herb and Tomato Salad
3 large ripe tomatoes, sliced
1/3 c flat leaf parsley or curly for substituion
1/4 c fresh cilantro
1/4 fresh mint leaves
2 tbsp freash tarragon leaves
2 spring onions, chopped, and sliced thin. (USE TOPS!)
1/4 c feta cheese, crumbled
plain yogurt
Arrange tomatoes on serving platter. Mix remaining ingredients –except
cheese and yogurt–sprinkle over the tomatoes. Next, sprinkle the cheese
over the herbs. Serve with the yogurt.

Main Course
Herbed Chicken
2 tbsp butter
2 tbsp olive oil
1/4 c finely chopped onion
1/4 c fresh lemon juice
2 tbsp worcestershire sauce
1 1/2 tsp fresh basil, chopped
1/4 tsp fresh oregano
2 large cloves, finely chopped
2 1/2 – 3 lbs fryer chicken, cut up
Heat butter abd oil in rectangler pan, 13 X 9 in a preheated 375 degree
oven. Stir in remaining ingredients except chicken. Place chicken–skin
sided up– coating it w/ the herbs. Bake uncovered for 30 mins. Turn the
chicken and continue to bake for 35 mins.

Veggie and Pasta Dish
Broccoli and Fettuccine Milanese
1/2 lb of fettuccine, cooked
1 c of heavy cream
2 tbsp butter
2 cloves of garlic, minced
1/2 c freshly grated Parmesan cheese
1 c chopped fresh broccoli, chopped
In a large saucepan, combine the hot pasta with remaining ingredients and
toss. Cover pan and warm over low heat to serving temperature.

White Chocolate Brownies–FOLLOW RECIPE AS WRITTEN!!
1 stick of unsalted butter
8 oz white choc chips
2 large eggs
pinch of salt
1/2 c white sugar
1/2 tsp vanilla extract–best if use real vanilla
1/2 tsp salt
1 c all purpose flour
8 ox semi sweet choc chips
Preheat oven to 350 degrees. Lightly grease an 8 inch square baking pan.
Line bottom w/ foil and lightlygrease the foil. Set pan aside.
In a heavy sauce pan, melt butter over low heat. Remove from heat and add
1/2 white chocolate. (DO NOT STIR) In a large bowl, beat eggs and salt
(pinch) until frothy. (USe an electric mixer). Gradually add sugar, beating
until pale yellow and a slowly dissolving ribbon forms when beaters are
lifted. Add butter mixture, vanilla, and the 1/2 tsp of salt. Add flour and
mix until combined. Still in semi sweet choc and remaining white choc.
Spoon into the prepared pan-smoothing the top w/ a spatuala. Bake for 30
mins. Cool before cutting. Yeilds 16 brownies.
