Saute pork until brown<br />about 10 minutes.<br />Combine chili powder<br />garlic<br />oregano<br />cinnamon<br />cloves<br />cumin<br />and 1 cup(s) stock in a food processor or blender and process until ingredients form a smooth paste.<br />Drain fat from the skillet if necessary<br />then add the puree. Stir-fry peanuts and crushed red pepper over medium-high heat for 2 minutes; remove. <p>Brown pot roast in hot fat. Add water<br />tomato sauce<br />onions and garlic. Cover and cook over low heat for 2 hour(s).</p>
<p>Add remaining ingredients. Cover and continue cooking until meat is tender. Serve with cornmeal or plain dumplings.</p>
<p>Cornmeal Dumplings<br />1 egg<br />1/2 cup(s) milk<br />3/4 cup(s) cornmeal<br />1/2 cup(s) flour<br />1/2 teaspoon salt<br />1 1/2 teaspoons baking powder Beat egg with milk. Add 2 tablespoons melted shortening or margarine. Add remaining ingredients and blend well. Drop by tablespoons into pot roast sauce<br />cover pan tightly and simmer for 15 minutes.</p>

Combine egg and 2 tablespoons milk in a shallow dish. Dip steaks in egg mixture; dredge in cracker crumbs.</p>
<p>Pour oil to depth of 1/2 inch into a large<br />heavy skillet. Fry steaks in hot oil over medium heat until browned<br />turning once. Cover<br />reduce heat<br />and simmer<br />turning occasionally<br />15 minutes or until tender. Remove steaks<br />and drain on paper towels. Keep warm.</p>
<p>Drain off drippings<br />reserving 3 tablespoons in skillet. Add 3 tablespoons four<br />stirring until smooth. Cook 1 minute<br />stirring constantly. <p><b>Ingredients / Directions</b> <br /> Meat Patties<br />1 1/3 pounds lean ground beef<br />3/4 cup(s) finely chopped onion<br />1 egg<br />slightly beaten<br />1 tablespoon Worcestershire sauce<br />1 teaspoon seasoned salt<br />1/2 teaspoon pepper<br />1/2 teaspoon garlic powder<br />1/3 cup(s) self-rising flour Combine all ingredients except flour. Shape meat into 4 patties. Dredge patties in flour. Heat 3 tablespoons of oil in skillet. Brown patties in oil over medium high heat on both sides. Remove from skillet.</p>
<p>Onions<br />2 medium onions<br />thinly sliced</p>
<p>Add onions to drippings in skillet; reduce heat to medium and saut? until onions are browned.</p>
<p>Gravy<br />1/4 cup(s) self-rising flour<br />1/2 teaspoon seasoned salt<br />1/2 teaspoon salt<br />1/4 teaspoon pepper<br />2 cup(s)s water</p>
<p>Combine gravy ingredients in a bowl<br />mixing well with wire whisk. Pour into skillet with onions<br />stirring constantly until gravy thickens (only takes a few minutes ).</p>
<p>Return patties to skillet<br />turning to coat with gravy. Cover<br />reduce heat and simmer for 15 minutes or until done.</p>
<p>I put my browned patties in a casserole dish and cover with thickened gravy and onions. Cover casserole and bake for 30 minutes at 350 degrees F.</p>
