575m1 carton long life milk whole or skimmed 1 tbsp plain yoghurt

1 tbsp dried milk powder to thicken

Use very clean utensils.

Mix the yoghurt and milk powder together in a bowl.

Warm the milk (I stand mine in a jug on top of the aga).

Do not overheat the milk this will kill the yoghurt bacteria.

The milk should be warm to the touch.

Blend the yoghurt mixture and the warm milk together.

Put a folded teatowel or trivet on the simmering plate lid.

Stand on a colander.

Put the bowl containing the yoghurt mixture in the colander.

Cover with a plate and leave 12 hours or overnight.

The yoghurt should be set thick and creamy. Store in the fridge.

Home made yoghurt is very easy with the aga supplying a constant even temperature. If you and your family eat a lot of yoghurt it is certainly worth making. Of course you can add a variety of flavourings when it is made: fruits jams honey nuts or simply use plain in savoury dishes or as a substitute for cream. Do not be tempted to use your own home made yoghurt as a starter for a new batch it is always safer to start with a small pot of commercial yoghurt. You can use either ordinary yoghurt or greek style they use different cultures so will give you a different flavour.
