50g butter
50g lard
225g self raising flour
50g caster sugar
1/2 tsp grated nutmeg
75g currants
1 egg
milk to mix
Rub the fats into the flour stir in the sugar spice and currants.
Make a soft but manageable dough with the beaten egg and some milk if necessary.
Divide the dough in half.
Pat out on a floured worktop into two rounds approximately the thickness of the hand.
Cut into 8 triangles per round.
Brush the surface of the simmering plate and oil lightly.
Cook the Welsh cakes spread out on the plate 4 to 5 minutes on each side to cook through.
They may darken but they are still delicious.
If they cook too fast on the outside or if you know the simmering plate is very hot leave the lid up for a few minutes before starting to cook.
Serve warm straight from the hot plate split and buttered.
These are quick and easy to make and taste delicious straight from the simmering plate with lots of real butter.
