vegetable couscous
450g couscous
25g broccoli florets
100g peas
100g mangetout peas
4 spring onions
juice of 1 lemon
8 tbsp olive oil
1 tsp mustard
salt and pepper
Place the couscous in a mixing bowl and cover with boiling water.
Cover the bowl. with a plate and leave to stand while preparing the other ingredients.
Trim the broccoli florets and top and tail the mangetout.
Bring a pan of water to the boil add a pinch of salt the broccoli and mangetout return to the boil and then add the peas. Boil for 2 minutes and then drain the vegetables.
Drain the couscous of any liquid gently stir in the broccoli mangetout and peas. Finely slice the trimmed spring onions add to the couscous mixture.
Whisk together the lemon juice olive oil mustard and salt and pepper to taste. Pour over the couscous.
Serve warm.
Couscous is a wonderful alternative to rice and pasta. It is so easy to prepare and can be served hot or cold. Often it is served as a salad with chopped tomatoes cucumber mint and salad dressing. This recipe is served warm.
