tuna nicoise

125g shallots

6 tbsp lemon juice

100ml extra virgin olive oil

salt and freshly ground black pepper

450g fresh tuna steaks

1 lemon

2 level tsp chopped fresh thyme

2 tbsp olive oil

cherry tomatoes cucumber french beans hardboiled eggs and pitted olives to serve rouille or mayonnaise with saffron and garlic to accompany lemon to garnish

Finely chop the shallots; mix them with the lemon juice and extravirgin olive oil; season.

Cut tuna into 50mm strips coat in juice of the lemon and thyme; season.

Heat the olive oil in a frying pan add the tuna and cook in batches on the boiling plate for 2 to 3 minutes.

Serve the warm tuna and shallot dressing on a salad of cherry tomatoes cucumber lightly cooked french beans hardboiled eggs and pitted olives.

Accompany with rouille or mayonnaise that has been flavoured with a little saffron and garlic.

Garnish with lemon wedges.

A treat for the eyes as well as the taste buds! This dish is a colourful combination of summery ingredients that evoke mediterranean days in the sun
