tomato and apple chutney
1.4 kg tomatoes
2 apples peeled cored and roughly chopped
1 medium onion finely chopped
2 garlic cloves crushed
250g light soft brown sugar
2 level tsp fresh ginger finely chopped
1level tsp turmeric
250g sultanas
100ml white wine vinegar
2 tsp salt
Scald the tomatoes for 7 to 8 seconds in boiling water.
Peel quarter and squeeze out the seeds Roughly chop.
Combine the tomatoes in a large shallow pan with all the remaining ingredients. Cook briskly on the boiling plate for 5 to 7 minutes stirring constantly when boiling.
Transfer to the floor of the roasting oven and cook uncovered for 15 to 20 minutes until thick and well reduced.
Cover the pan and transfer to the simmering oven for 30 minutes to complete cooking.
Pot while still very hot and screw down lids immediately.
This recipe is ideal for using up a glut of tomatoes.
