sweet and sour pork

Marinade:

450g lean pork cut into cubes

1 tbsp dry sherry

1tbsp light soy sauce

sauce:

150mI chicken stock

1 tbsp oil

1tbsp soy sauce

1 1/2 tbsp cider or white wine vinegar

1 tbsp sugar

1 tbsp tomato puree

1/2 green pepper finely sliced

1/2 red pepper finely sliced

2 carrots sliced

4 spring onions chopped

1 small bag bean shoots

1 tsp cornflour blended with a little water

Toss the meat in the sherry and the 1 tbsp soy sauce.

Marinate for at least half an hour to tenderise the meat and add flavour.

Heat the oil in a flameproof casserole and brown the meat.

Stir in the chicken stock soy sauce vinegar sugar tomato puree and carrots. Bring to the boil put in the bottom of the simmering ovenfor 45 minutes to 1 hour.

Return to the simmering plate stir in the peppers and spring onions and simmer for 10 minutes.

Stir in the cornflour paste and the bean shoots.

Stir well until heated through. Taste and serve.

I love the flavours of sweet and sour pork but I am not keen on deepfat frying so I make a casserole to cook the meat and add crispy vegetables towards the end of the cooking time. Serve with plain rice.
