pork casserole

700g boneless leg of pork

3 tbsp oil

225g onion peeled and chopped

1 garlic clove peeled and crushed

450g parsnips peeled cored and sliced

1 tbsp ground coriander

1 tsp cumin seeds or 1 tbsp ground cumin

2 tbsp plain flour

300ml pork or chicken stock

200ml apple juice or cider

salt and freshly ground black pepper

2 small crisp red eating apples snipped chives to garnish

Cut the pork into 25mm pieces.

Heat the oil in a flameproof casserole on the boiling plate.

Fry the meat in batches until evenly browned; drain on kitchen paper and set aside.

Add the onion and garlic to the casserole and sautrs for 2 to 3 minutes on the simmering plate.

Add the parsnips coriander and cumin and sautee for 2 minutes.

Stir in the flour.

Off the heat gradually add the stock and apple juice.

Season with salt and pepper.

Bring to the boil and replace the meat.
