passion cake
275g plain flour
1 level tsp salt
1 level tsp bicarbonate of soda
2 level tsp baking powder
175g soft brown sugar
3 eggs
2 ripe bananas
175g grated carrots
150g finely chopped walnuts
175g light corn oil
Frosting:
75g butter
75g cream cheese
175g icing sugar
1/2 tsp vanilla essence
walnuts to decorate
Sift flour salt bicarbonate of soda and baking powder into a mixing bowl.
Add the sugar and chopped nuts.
Crack in the eggs add mashed bananas and grated carrot.
Add the corn oil and beat the mixture well to make a soft cake batter.
Divide between two greased and lined 200mm sandwich tins.
Have the ovenshelf on the floor of the oven.
