275g self raising flour

225g soft margarine

150g demerara sugar

2 tsp ground ginger

Mix all the ingredients together to give a stiffish dough.

Roll small walnutsized pieces into balls and space them well apart on greased baking trays.

Using a fork dipped in water press each biscuit down gently.

With the ovenshelf on the bottom set of runners in the roasting ovenslide the biscuits in.

Put the cold shelf on the top set of runners.
