crispy potato skins

900g baking potatoes coarse sea salt

oil for basting

To serve:

soured cream or crime freiche snipped chives

Prick the skins of the potatoes and rub with salt.

Place in the roasting tin and hang the tin from the third set runners in the roasting ovenfor lye hours.

Quarter the potatoes and scoop out the insides leaving a good 10mm thickness of potato flesh attached to the skins.

Brush the potato skins all over with oil and return to the roasting tin.

Hang the tin from the top set of runners in the roasting ovenand cook for 20 minutes until crisp and golden.

Drain on kitchen paper and toss in coarse salt.

Pile into a serving dish and top with soured cream or crime fraiche and snipped chives.

Serve immediately.

These are the ideal accompaniment to serve with devilled roast chicken or they can be served as a starter or snack on their own.
