75g butter plus extra for greasing
200g demerara sugar
175 ground rice
2 large eggs
pinch of salt
2 drops vanilla essence
75g desiccated coconut
75g chopped hazelnuts
3 level tbsp apricot or raspberry jam plus extra for brushing
Baseline a small roasting tin with nonstick baking parchment.
Cream together the butter and 75g of the sugar until light and fluffy.
Stir in 150 g (5 oz) of the ground rice. Pat the mixture into the prepared tin.
