cinnamon apple cake
150g soft margarine
150g caster sugar
200g self raising flour
1 heaped tsp baking powder
2 large eggs beaten
t tsp cinnamon
few drops vanilla essence
3 tbsp warm water
3 tart green eating apples such as franny Ssmiths

small roasting tin lined on fourth set of runners in roasting ovenwith cold shell on second set of runners OR second set of runners in baking ovenof four ovenaga
cream together all the ingredients for the cake until the mixture is pale and fluffy it should be of a very soft dropping consistency.
Spread the cake mixture lightly but evenly into the tin which you have prepared.
Peel core and quarter the apples then score them with a fork to give a ridged effect then press them lightly into the cake.
Bake for 25 to 30 minutes turning the tin once during baking. This helps to brown the apples evenly.
A spicy apple cake that could easily be served hot as a pudding with custard in which case serve the left overs as cake.
Makes 16 to 20 pieces
