chocolate pecan fudge cake
175g butter softened
175g caster sugar
175g self raising white flour
50g cocoa powder
2 tsp baking powder
4 eggs
2 tsp vanilla essence
3 tbsp water
icing:
300g plain dark chocolate
50g unsalted butter
4 tbsp milk
225g icing sugar
Filling:
50g pecan nuts roughly chopped
4 tbsp maple syrup
To decorate:
200g plain dark chocolate
cocoa powder for dusting
Grease and baseline two 200mm sandwich tins
Beat the butter and sugar together in a bowl until light and fluffy.
Sift the flour cocoa and baking powder together over the creamed mixture.
Add the eggs vanilla essence and water. Beat using an electric whisk for 2 minutes until smooth and paler in colour.
Divide the mixture between the prepared tins and level the surfaces.
