chocolate pancakes

150g plain chocolate

100g plain flour

1 large egg

pinch of salt

300ml skimmed milk

25g butter

1 level tbsp light brown sugar

4 medium bananas thickly sliced

8tbsp brandy

vegetable oil for brushing

icing sugar to dust

greek yogurt to serve

chocolate shavings to decorate

Place 50g chocolate in a food processor and chop.

Add the flour egg salt and milk and process until smooth.

Pour into a measuring jug.

Cover and chill for 30 minutes.

Melt the butter and sugar in a frying pan. Add the bananas and stirfry on the boiling plate for 2 minutes.

Add the brandy (take care when doing this as it may ignite in the warm pan) and continue to simmer until bananas soften and the liquid is syrupy (about 1 to 2 minutes). Set aside.

lightly wipe an 180mm non stick crepe or small frying pan with oil on kitchen paper and heat on the boiling plate.

Wipe the simmering plate with oil.

Stir the batter and coat the base of the pan thinly with about 4 tbsp.

Cook for 1 minute or until golden brown then turn onto the simmering plate.

Put the lid down for 30 seconds to 1 minute to cook on the other side.

Cook for a further minute.

Transfer to a plate cover and keep warm. Cook remaining batter in the same way stirring the batter each time before cooking.

Chop the remaining chocolate.

Place two spoonfuls of banana flung over one half of each pancake; sprinkle with some of the chocolate.

Fold in half then in half again.

Arrange in a dish cover with buttered foil and place in the simmering oven for 15 to 20 minutes to keep warm.

Dust decorate and serve warm with yogurt.

aga tip: by using both plates when frying pancakes they can be cooked in half the time with less heat loss. This low calorie dessert is ideal for those watching then waistlines. You can use any fruit instead of the banana filling or serve the pancakes with chocolate sauce and vanilla ice cream or frozen yogurt.
