curried pork burgers

1 lb. British minced pork

1 teaspn oil

1 onion finely chopped

2 tblespns curry powder

1 tablespn mango chutney

40z breadcrumb

2 tablespns fresh coriander; chopped

1 size 3 egg beaten

salt and black pepper

plain flour to shape

oil

Dressing

9oz Greek yogurt

3 tablespns fresh coriander chopped

Heat the oil in a large saucepan add onion and curry powder and cook for one minute.

Remove from the heat and allow to cool.

Mix into the pork along with the remaining ingredients.

With lightly floured hands divide the mixture into six and shape into burgers.

Brush with a little oil and barbecue or grill for approximately six to eight minutes each side.

Mix together the dressing ingredients chill and serve with the burgers along with whole meal buns or nan bread and salad garnish.

Makes 6
