herb baked chicken

4 chicken portions skinless

1 egg seasoned flour

175g breadcrumbs

1 tbsp finely chopped parsley

2 tbsp finely chopped mixed herbs or 2 tsp dried mixed herbs

salt and pepper

grated rind of 1/2 a lemon

50g butter

Beat the egg in a shallow dish.

Spoon a little seasoned flour onto a plate.

Measure the breadcrumbs into a basin stir in the parsley herbs salt pepper and lemon rind.

Melt the butter in a basin on top of the aga and stir into the numbs and fork well.

Roll the chicken portions first in the flour then in the egg and finally in the breadcrtmbs patting them on firmly.

Place the chicken in the small roasting tin and slide it into the roasting ovenon the third set of runners from the top.

Bake for 30 to 40 minutes until crisp golden and cooked through there should be no pink juices when pierced with a sharp knife.

Serve with a good green salad and crusty bread.

I love to make this in the summer when there are plenty of fresh herbs to add flavour to plain chicken. I add a bunch of mixed fresh herbs to the bread in the food processor and everything is then chopped together. The amount of herbs used depends upon taste.
